Happy Friday, you beautiful souls! It’s about to get REAL over here, because I’m picking my parents up from the airport today, and then we are headed to Mexico on Sunday to start my wedding week. I’m so excited, but to be honest, I’ve been quite stressed out with some last minute planning and scrambling.

I think I’ll be in a much better state once we are there and enjoying the sun and the beach. However, with the amount of cortisol I’ve been dealing with, my liver needs some extra love these days. And the best way to do that? Enter the beet.

Paleo Vegan Beet Latte

Beets are so high in antioxidants, and have the power to eliminate toxins from the liver and improve the digestion of fats. I’ve been a fan for a long time, and when I tried out a beet latte at a LA coffeeshop a few weeks back, I knew I had to recreate it at home!

I was skeptical about the combination of beet and milk at first, but I’m quite obsessed with how decadent, creamy, and naturally sweet this pink beet latte tastes. And the gorgeous color just can’t be beat (or beet?)!

I have talked about in the past that I like to give up coffee for a week about once every month because I hate feeling like I’m addicted to or dependent on any one food. Well, this beet latte is a delicious substitute during those times and I still feel like I’m enjoying a hot yummy drink, without feeling deprived. Plus, I love that it’s doing the opposite of coffee: nourishing my liver and digestion instead of taxing it.

If you never tried beet latte before and are totally weirded out by it, I encourage you to try it! I think you’ll be surprised how yummy it tastes, and your body will love you for it.

Ingredients
  • 1 medium beetroot
  • ¼ inch fresh ginger
  • ½ tsp pure vanilla extract
  • ¼ tsp ground cinnamon
  • 1½ cup unsweetened non-dairy milk (I use almond)
  • Optional: 1 tsp honey
Instructions
  1. Place beetroot in a saucepan and submerge with water. Bring to boil over medium high heat, and turn down heat to low and simmer for 30 minutes until you can easily pierce the beet with a fork.
  2. Drain the beet, let it cool for 15 minutes, and peel it.
  3. Place the peeled beet in a blender with ginger, vanilla extract, and cinnamon. Set aside.
  4. Heat milk in a saucepan over medium heat until it begins to simmer. Remove from heat.
  5. Pour ½ cup of the milk into the blender with the beet and blend well until smooth, about 5 minutes Pour into a mug.
  6. Use a milk frother on the rest of the milk or blend in the blender to until it gets foamy.
  7. Gently pour the foamed milk into the mug over the beet mixture, while stirring with a spoon.
  8. Stir in honey, if using, and enjoy!

It’s that time of the year again! The Shamrock Shake is out in time for St. Patrick’s Day. There was a time when I used to make a trip to McDonald’s every Spring, and revel in the sugar high I would get from it. This was back when my health was in a less than ideal state with ongoing digestive and skin issues from all the crap I was eating.

I mean, have you see what’s in Shamrock Shake? Beside the obvious ingredients like milk, sugar, and cream, here are some of the worst offenders: high fructose corn syrup, nonfat milk solids, corn syrup solids, dextrose, artificial flavoring, artificial coloring, carrageenan, and so many other more obscure additives. There are actually a total of 54 ingredients which is mind-blowing to me. You don’t need that in your life, trust me.

Making your own version with clean ingredients is much healthier and soooo delicious. And it takes minutes to whip up! This paleo and vegan shamrock shake tastes really similar to the real thing and I’m a bit obsessed now.

One of the best features of the Shamrock Shake is how crazy thick and decadent it is. Using cashews and a frozen banana, I’m so happy that I was able to recreate that creamy texture. I actually ate half of this with a spoon!

This year, instead of heading to McDonald’s and drinking up bunch of harmful chemicals and inflammatory additives, make this paleo and vegan Shamrock Shake at home. It’s easy, fast, and tastes pretty darn close to the real thing. If you have kids, they’ll love the fun green color and they’ll have no idea it’s filled with nutritious greens!

Serves: 1-2
Ingredients
  • 1 cup raw unsalted cashews
  • 1 cup dairy-free milk of your choice (I used almond)
  • 1 banana, frozen and roughly chopped
  • 1 cup packed spinach
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup (Omit for sugar detox)
  • ¼ tsp peppermint extract
Instructions
  1. Combine all ingredients in a high-powered blender.
  2. Blend until smooth and frothy.
  3. Pour into 1 large glass or 2 small glasses, and serve.

Gosh, Christmas is still a week and a half away and I feel like I’m already indulging in too many sweets. Especially during a time when we are all indulging a bit too much, it becomes even more important to take care of ours bodies and practice light detoxification. I usually feel pretty crappy with too much sugar from my candida issues but it has been quite manageable this season by drinking this tea every morning.

The secret ingredient? Apple cider vinegar! Apple cider vinegar is one of my favorite cooking staples and I use it everyday, even in my skin care routine. It has so many health benefits and it differs from regular white vinegar in that it’s made from apples (duh) and that it’s been fermented. For true healing benefits, make sure that the label says “raw”, “unfiltered”, and “with the mother.” The “mother” means that it has gone through a true fermentation process.

Here are just some of the benefits:

  • Aids in detoxification
  • Known to lower blood sugar
  • Improves digestion by increasing stomach acid production
  • Contains anti-fungal and anti-bacterial components (that’s why it’s GREAT for candida overgrowth!)
  • May increase satiety so you avoid overeating

Ingredients
  • 2 cups of water
  • 5 thinly sliced raw ginger
  • ¼ tsp ground cinnamon
  • 2 tbsp apple cider vinegar (raw, unfiltered)
  • Juice from ½ lemon
  • 2 tsp raw honey or maple syrup (or more, to taste)
  • Pinch of cayenne
Instructions
  1. In a saucepan over medium high heat, combine water, ginger slices, and cinnamon. Once it comes to boil, turn down the heat to low and simmer for 10 minutes.
  2. Remove from heat, add the rest of the ingredients, and stir.
  3. Strain, pour into a mug, and serve warm.
Notes
As with any food that facilitates detoxification, you may or may not experience detox symptoms in the beginning which may make you feel sick in various degrees and ways. If this is the case for you, start out slow and increase you intake slowly over time!
