It’s that time of the year again! The Shamrock Shake is out in time for St. Patrick’s Day. There was a time when I used to make a trip to McDonald’s every Spring, and revel in the sugar high I would get from it. This was back when my health was in a less than ideal state with ongoing digestive and skin issues from all the crap I was eating.

I mean, have you see what’s in Shamrock Shake? Beside the obvious ingredients like milk, sugar, and cream, here are some of the worst offenders: high fructose corn syrup, nonfat milk solids, corn syrup solids, dextrose, artificial flavoring, artificial coloring, carrageenan, and so many other more obscure additives. There are actually a total of 54 ingredients which is mind-blowing to me. You don’t need that in your life, trust me.

Making your own version with clean ingredients is much healthier and soooo delicious. And it takes minutes to whip up! This paleo and vegan shamrock shake tastes really similar to the real thing and I’m a bit obsessed now.

One of the best features of the Shamrock Shake is how crazy thick and decadent it is. Using cashews and a frozen banana, I’m so happy that I was able to recreate that creamy texture. I actually ate half of this with a spoon!

This year, instead of heading to McDonald’s and drinking up bunch of harmful chemicals and inflammatory additives, make this paleo and vegan Shamrock Shake at home. It’s easy, fast, and tastes pretty darn close to the real thing. If you have kids, they’ll love the fun green color and they’ll have no idea it’s filled with nutritious greens!

Serves: 1-2
Ingredients
  • 1 cup raw unsalted cashews
  • 1 cup dairy-free milk of your choice (I used almond)
  • 1 banana, frozen and roughly chopped
  • 1 cup packed spinach
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup (Omit for sugar detox)
  • ¼ tsp peppermint extract
Instructions
  1. Combine all ingredients in a high-powered blender.
  2. Blend until smooth and frothy.
  3. Pour into 1 large glass or 2 small glasses, and serve.

I’m honestly not ready for the summer to be over yet and I’m that person who’s yelling, “Stop posting about Fall and pumpkins!” while checking social media during this time of year. Dairy-Free Strawberry Milk SlushieI remember getting slushies all the time as a kid, loving the extreme sweetness of those sugar-filled drinks that made my tongue turn into obscenely bright colors. I can’t really imagine enjoying those drinks today now that my taste buds have changed, but I do miss the texture of shaved ice that instantly cools your soul as you drink it. So when I found out that I can make shaved ice with my blender that I’ve owned for 2 years now, I WTFed about the past 2 summers that I missed out making delicious cold slushies.

Well, it’s never too late (or early) to enjoy a slushie in my book so as everyone starts getting ready for Fall, I’ll be here sipping on this strawberry milk slushie imagining that I’m on a sunny beach somewhere. If you are also a summer lover like me, join me and let’s pretend the warm weather and long days will never end. If you are excited for Fall to start, then you should make this anyway because it’s pretty darn delicious and it’s a simple and easy way to take advantage of all the strawberries before they go away! Sad face.

Serves: 1 slushie
Ingredients
  • 1 cup ice (about 5 standard cubes)
  • ½ cup strawberries
  • ½ cup almond milk
  • 1 tbsp almond butter
  • 2 tsp honey or maple syrup
Instructions
  1. In a high powered blender, blend 1 cup of ice until it becomes a consistency of shaved ice.
  2. Pour the shaved ice into a glass.
  3. Place strawberries, almond milk, almond butter, and honey (or maple syrup) into the blender, and blend until smooth.
  4. Pour over ice, and enjoy immediately!

Energy Boosting Mint Chocolate Spirulina Smoothie

Mint Chocolate Spirulina SmoothieRecently, I’ve been feeling a bit run down and low on energy. This happens when I push myself a bit too much (the down side of being type A) and stress starts affecting my energy level. I found out about spirulina a few months ago and I decided to give it a try. Although the taste takes some time to get used to, it’s incredibly nutrient dense and known for it’s energy boosting abilities.

Spirulina is a powder form of blue-green algae that is ultra rich in vitamins (B vitamins, A, E, K, C, and D), minerals (potassium, calcium, zinc, chromium, copper, iron, magnesium, manganese, phosphorus, and selenium), proteins and amino acids, carotenoids, and antioxidants. With its myriad of nutrients, it is incredibly beneficial for the health of your brain and body. Though I don’t like to use the word “superfood,” it is considered to be one because of its nutrition profile and its ability to remove toxins from the body.

Some additional health benefits are:

  • Reduces cholesterol
  • Reduces allergy and sinus issues
  • Lowers inflammation in the body

Mint Chocolate Spirulina SmoothieI didn’t find the taste of spirulina off-putting at all when I first tried it, but many people have a hard time getting used to it. So I thought chocolate would be the best way to mask the taste. Specifically, mint chocolate… because who doesn’t love that?

With some spinach added in for some extra greens, you’ll love this energy boosting mint chocolate spirulina smoothie. I like to drink one of these in the morning, and I do feel more alert and better overall. I’ve been incorporating it regularly into my diet and I love that it feels like I’m eating dessert!

Energy Boosting Mint Chocolate Spirulina Smoothie

Serves: 1 or 2 small servings
Ingredients
  • 1 large banana
  • 1 cup almond milk
  • 1 cup spinach
  • 1 tbsp almond butter
  • 2 tbsp cacao powder
  • 12 fresh peppermint leaves
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 tsp spirulina
  • Optional: 1-2 tsp honey, if you prefer sweeter
  • Optional: Cacao nibs and shredded coconut, for garnish
Instructions
  1. Please all ingredients (except cacao nibs and cinnamon, if using) in a blender and blend until creamy.
  2. Pour into a glass, sprinkle with cacao nibs and shredded coconut (optional) and enjoy!
