The first time I had Thai iced coffee, my first thought was, “WHAT IS THIS CRACK THAT I’M DRINKING?” No joke. It was love at first taste. It’s the creamiest coffee ever that’s deliciously sweet, and it basically tastes like coffee ice cream in liquid form.

With the temperature hitting the 90s these days, there’s just no way I’m drinking hot coffee in the mornings. So I decided to make a paleo and vegan version of my favorite iced coffee, and I’ve been absolutely loving it!

This Coconut Milk Thai Iced Coffee is so decadent without a hint of dairy. The key is to make a thick and creamy sweetened condensed milk using coconut milk, which is much easier than you think. All you have to do is simmer the coconut milk and a sweetener until it’s reduced, then add almond extract and cardamom to make it taste truly authentic. It’s seriously the best combination of flavors.

The Key to Tasty Coconut Milk Thai Iced Coffee

To make your coconut milk Thai iced coffee super yummy and not watered down, it’s important to make your coffee super strong. I used my espresso maker to brew my coffee, which turned out perfect. Then you can add plenty of ice to keep it cold and enjoy every sip!

You can even make the coffee and the sweetened condensed coconut milk ahead of time and enjoy it for a few days. Just make sure to whisk the coconut milk before pouring it over the coffee because it can separate as it sits in the refrigerator. It’ll combine well to it’s original creamy form once you shake it up a bit, so mix it up and enjoy the most delicious coffee, perfect to cool down with in the summer!

Ingredients

  • 4 cups strongly brewed coffee
  • Ice cubes
  • Additional dairy free milk optional

Sweetened Condensed Coconut Milk

Instructions

  1. Place the coffee in the refrigerator to let it chill.

  2. Add coconut milk in a saucepan. 

  3. Heat over medium high heat while whisking, until it starts to boil. 

  4. Reduce the heat to low to simmer, then add maple syrup.

  5. Simmer while whisking occasionally for 30 minutes, or until the mixture is reduced to half.

  6. Stir in cardamom powder and almond extract. 

  7. Remove from heat and let it cool. Refrigerate to chill for at least 1 hour.

  8. To make the Thai iced coffee, place ice cubes in 4 glasses. 

  9. Divide the coffee into the glasses.

  10. Whisk the sweetened condensed coconut milk if it's separated, and pour over the coffee.

  11. Stir together and enjoy! You can add more dairy free milk if you want it creamier.

With summer in full swing, I’ve been looking for a delicious refreshing drink to cool down with in the evenings and on weekends. While I don’t imbibe often, when I do decide to, I love something cold and refreshing like a prosecco that’s so fun and yummy at the same time, especially in the summertime.

I recently had the pleasure of trying out Riondo Prosecco, an Italian sparkling wine that’s crisp and fruity with a perfect amount of sweet. I love that it has a screw-top for easy drinking, so you don’t have to feel like you need a special occasion to enjoy it. Plus, I have a weird irrational fear of opening champagne bottles and possibly hitting someone in the eye (I know, I know… highly unlikely), so I extra-appreciate this feature.

While Riondo Prosecco is delicious on its own, I decided to make it even more refreshing than it already is with this Cherry Cucumber Prosecco Spritz. Cherries are one of my favorite fruits, and I absolutely love adding cucumber to drinks so I decided to combine these two things in this easy and crisp cocktail.

To make this Cherry Cucumber Prosecco Spritz, chopped cucumber is muddled with Aperol and cherry juice to release the refreshing flavor and juices. It’s then shaken up with ice and poured into a  wine glass, then topped with Riondo Prosecco to add that sparkling goodness.

I love this drink on a hot day as it always cools me down instantly. I hope you end up trying it out because it’s absolutely delicious!

Ingredients

  • 2 inch piece of cucumber chopped
  • 1 oz Aperol
  • 1 oz cherry juice no sugar added
  • Ice
  • 1 Riondo Prosecco chilled
  • Optional: Fresh cherries for garnish
  • Optional: Cucumber ribbons for garnish

Instructions

  1. Place cucumber, Aperol, and cherry juice in a cocktail shaker, and muddle.

  2. Add ice, and shake vigorously. 

  3. Strain into a glass over ice, then top with Riondo Prosecco.

  4. Garnish with fresh cherries and cucumber ribbons, if using , and enjoy!

I don’t drink much alcohol, but the rare times that I do, it’s because I simply can’t say no to a good margarita. Tequila is my drink of choice and it seems to be the only type of liquor that doesn’t make me feel like complete crap afterwards. So when I recently visited Sayulita, you know I definitely indulged in a margarita or 5.

Well, Cinco de Mayo is this weekend, so I thought, what better excuse than to whip up a delicious margarita recipe? With hot, sunny days just around the corner, I couldn’t think of a better way to cool down than with this refreshing Paleo Watermelon Margarita Slushie.

One thing I get annoyed with when I drink frozen cocktails is that, especially on a warm day, the ice melts too quickly and the drink gets watered down by the time you are halfway through it. Well, with this drink, that never happens because instead of using ice, you freeze the watermelon directly then blend it together to get that slushie texture. You definitely don’t need to rush through it to enjoy the yummy taste since it never gets diluted.

I tried this recipe both with and without the tequila and both ways tasted pretty darn amazing. While it’s fun to add the alcohol, you can also enjoy it as a delicious frozen treat especially if you have non-drinkers or kids around who want to feel included in the festivities. Whether you enjoy it as a cocktail or a mocktail, I think you’ll love this delicious and refreshing Paleo Watermelon Margarita Slushie!

Ingredients

  • 5 cups diced watermelon frozen
  • 3/4 cup 100% agave tequila omit for AIP or if avoiding alcohol
  • 1/2 cup freshly squeezed lime juice
  • 2 tbsp raw honey or more, to taste
  • Sea Salt
  • Optional: lime and/or watermelon slices for garnish

Instructions

  1. Pour sea salt in a small dish. Run a lime wedge around the rims of 4 glasses to wet them, then dip in sea salt. 

  2. Place frozen watermelon, tequila (if using), lime juice, and honey in a high powered blender, and blend until smooth. 

  3. Taste and add more honey, if needed.

  4. Divide the slushie into the prepared glasses, then garnish with lime wedges and watermelon slices before serving.
