Beat butter, sugar, and vanilla extract until creamy and fluffy, then add the egg and beat slowly until combined.
In a separate bowl, mix the dry ingredients together, add to the whipped butter mixture, and mix on low until combined into a soft dough.
Fold in graham cracker crumbs and chocolate chips. Roll the dough into small balls and place on a prepared baking sheet.
Stick mini marshmallows on top of the cookie dough balls, pushing the dough around the marshmallows, then bake for 11-13 minutes.
Carefully stick a mini square of chocolate into each cookie immediately and sprinkle with graham cracker crumbs and flaky sea salt.
