Cheesecake Filling • Raw Cashews • Maple Syrup • Lemon Juice • Coconut Milk
Process pecans, dates and coconut flakes until crumbly and sticky, then press the crust mixture into a prepared muffin tin.
Blend all cheesecake filling ingredients until smooth and creamy. Divide the filling evenly over the crust, then freeze for at least 3 hours to set.
Melt chocolate chips until smooth and spoon over each cheesecake. Then top with a strawberry dipped in chocolate and allow to set.
