Heat olive oil, add chorizo and onion, and cook stirring until crispy. Add garlic, tomato paste and chicken broth and bring to a boil until reduced.
Stir in heavy cream, and bring to a boil, then add in cream cheese and parmesan. Reduce to a simmer and stir in baby spinach until wilted.
Stir in cooked pasta to combine. Serve warm, garnished with parsley, red pepper flakes and more parmesan.
