Optional Soft Boiled Eggs or Your Favorite Protein
Bring a large pot of water to a boil, and cook the noodles according to package instructions.
Next, whisk peanut butter, soy sauce, gochujang, rice vinegar, sesame oil, sugar, garlic, some pasta water and ginger until smooth.
Add the cooked noodles to the sauce and toss together to combine.
Serve warm, topped with green onions, cucumbers, cilantro, sesame seeds and a soft boiled egg or your favorite protein.
