Peel, core, and chop your apple. Melt butter, add apple, sugar, water, and cinnamon. Cook for 5 minutes, then stir in starch and cook until thickened and sticky.
Stir together pancake mix, butter, and sugar, mix until crumbly. Add coconut milk and vanilla, and stir until a wet dough is formed.
Drop the dough onto a prepared baking sheet, and make an indent in the center with a spoon. Fill the center with apple filling then brush with egg wash.
Bake for 15-17 minutes until puffed and golden. If using glaze, stir together powdered sugar and milk and drizzle over the cooled gluten free danish.
