Combine ground beef, chili powder, cumin, oregano, and paprika. Then cook the bacon until browned and crispy. Allow to cool, then crumble the bacon.
Cook onion and red bell pepper in bacon fat, until tender. Stir in garlic and tomato paste, then add in the ground beef and spice mixture.
Add in broth, diced tomatoes, potatoes, and lime juice. Once the mixture starts to boil, lower the heat and simmer for 15-20 minutes.
When the chili has reduced and thickened to your liking, season with salt and top with bacon and optional garnishes.
