Combine all curry sauce ingredients, you can cut the apple into chunks and blend all the ingredients together, to cut down on time.
Heat oil and cook the onion and chicken until browned, then stir in the potatoes, carrots, and garlic.
Bring to a boil, then reduce to a simmer and stir in the prepared curry sauce. Simmer until slightly reduced and thickened to your liking.
Add more tamari sauce if needed, or you can add some honey or sugar if you want it sweeter, then serve warm over rice.
