Banana Upside Down Cake

This paleo and gluten free banana upside down cake looks fancy and impressive, but actually so easy to make! Moist, fluffy, and delicious, it’s mostly sweetened with bananas.

INGREDIENTS

• Bananas • Eggs • Maple Syrup • Vanilla • Almond Flour • Tapioca Starch • Sea Salt

BANANA TOPPING • Bananas • Ghee • Coconut Sugar

INSTRUCTIONS

Whisk together ghee and coconut sugar and spread evenly on the bottom of a pan. Place the banana slices over the mixture in a single layer.

In a blender, add bananas, eggs, maple syrup, and vanilla extract. Blend until smooth and there are no chunks left.

Add almond flour, tapioca starch, baking soda, baking powder, and sea salt to the blender and pulse until combined.

Pour the batter over the bananas. Bake for 40-45 minutes. Flip onto a cooling rack and cool completely before slicing.
