Roasted Tomato Soup

Creamy vegan and paleo roasted tomato soup with basil, garlic, and onions, with a drizzle of coconut milk. It's full of flavor, and makes a wonderful Whole30 side dish!

INGREDIENTS

Cherry Tomatoes

Garlic

Bone Broth

Coconut Milk

Onion

Oregano

Olive Oil

Seasoning

INSTRUCTIONS

Drizzle cherry tomatoes, garlic, and onion with olive oil. Season and toss to coat. Roast for 30 minutes.

Cool for 10 minutes, then transfer ingredients to a food processor. Blend until smooth, then add basil. Blend again.

Transfer to a large pot, pour in broth and oregano. Season to taste. Simmer for 10 minutes, then stir in coconut milk.

Serve hot, garnished with basil leaves and/or more coconut milk. ENJOY!
