Cream together butter and powdered sugar until light and fluffy, then beat in egg and vanilla extract.
Mix in flour and sea salt, then transfer the dough to a piping bag or a resealable bag with the corner snipped off.
Pipe 3-inch long logs onto a prepared baking sheet, then bake until the centers are set. Turn off the oven and leave the cookies to crisp up.
Melt the chocolate chips and spread a spoonful onto a cookie, then sandwich the chocolate with another cookie.
