Whisk together the yeast, salt, and sugar in warm milk. Then add the gluten free flour and sweet rice flour, and mix until a sticky dough forms.
Cover with plastic wrap and let it sit for an hour. Punch the dough to remove air bubbles and cover again. Mix the filling ingredients together.
Divide the dough into equal sized balls. Flatten and add filling in the center, then seal to make a ball again.
Cook until the bottom turns golden brown. Flatten and then flip and cook for a minute. Cover and cook until the sugar inside melts.
Repeat with the remaining dough balls. Serve warm and be aware that the center filling will be hot.
