Place onion, carrots, green beans, garlic, and ginger in the Instant Pot. Lay the chicken over the vegetables and season. Pour water over everything.
Set Instant Pot to "Soup" on high pressure for 30 minutes. Allow pressure to release naturally, then debone and shred the chicken and stir back into the pot.
