Thai Coconut Curry Meatballs

These Thai coconut curry meatballs are simmered in the most flavorful sauce in the Instant Pot or on the stovetop. They are a delicious and quick meal that’s paleo, Whole30, and keto!

KEY INGREDIENTS

• Ground Beef • Onion • Garlic • Ginger • Red Curry Paste • Basil • Fish Sauce • Tapioca Starch

Coconut Curry Sauce • Coconut Oil • Coconut Milk • Fish Sauce • Turmeric • Lime

INSTRUCTIONS

Combine all the meatball ingredients and shape into golf-sized balls. Then place in the refrigerator to firm up.

Turn Instant Pot on to Sauté and cook the onion until translucent. Then add the garlic, ginger, and red curry paste.

Turn off the Instant Pot, and stir in coconut milk, fish sauce, and turmeric powder. Then add in the meatballs and cook on high for 5 minutes.

Turn to Sauté and simmer until the sauce reduces and thickens. Sprinkle with lime juice and chopped basil before serving. Click for stovetop method
