• Ghee or Coconut Oil • Onion • Ginger • Garlic Cloves • Cumin • Curry Powder • Coconut Milk • Pureed Mangos • Apple Cider Vinegar • Sea Salt • Black Pepper • Cilantro • Boneless Skinless Chicken
First chop up all the vegetables and the chicken, and puree the mangos in the blender.
Sauté onion over medium high heat for 3-4 minutes. Add ginger, garlic, curry powder, cumin, salt, and pepper, and cook stirring for 1 minute until fragrant.
Stir in mango puree, coconut milk, and apple cider vinegar. Allow to simmer for 2 minutes uncovered. Add the chicken, cover and cook for 10 minutes.
Add more salt and pepper, if needed. Serve over rice or cauliflower rice, sprinkled with cilantro. ENJOY!
