This light and healthy Mediterranean cauliflower couscous salad is grain free, Whole30, keto, and vegan. It’s delicious and refreshing with a flavorful lemon dressing, and takes just 15 minutes to throw together!

KEY INGREDIENTS

• Cauliflower • Cucumber • Onion • Cherry Tomatoes • Parsley • Kalamata Olives • Mint

LEMON DRESSING • EVOO • Lemon Juice • Oregano • Apple Cider Vinegar • Garlic • Salt & Pepper

INSTRUCTIONS

Pulse cauliflower florets in a food processor until broken down. They should be rice-like in texture.

Pour cauliflower rice into a mixing bowl, then add cucumber, cherry tomatoes, onion, olives, parsley, mint, and feta cheese (if using).

Whisk together all the lemon dressing ingredients and pour over the vegetables. Toss until mixed and evenly coated.
