Moroccan Lentil Stew with Dates

Delicious, healthy, and filling Moroccan lentil stew packed with veggies and spices! It's lightly sweetened with Medjool dates for an amazing combination of flavors that comes together quickly.

KEY INGREDIENTS

• Dry Lentils • Medjool Dates • Onion • Celery • Carrot • Garlic • Cinnamon • Cumin • Coriander • Olive Oil • Vegetable Stock • Coconut Milk • Crushed Tomatoes • Red Pepper Flakes • Lemon

INSTRUCTIONS

Heat olive oil and sauté onion, celery, and carrot  Add the spices, and stir for 1 minute until fragrant.

Pour in dry lentils with crushed tomatoes, vegetable stock, and water. Bring to a boil then lower heat and simmer until the lentils are tender.

Add the Medjool dates and simmer until softened. Remove from the heat and squeeze in some lemon juice.
