Heat olive oil and sauté onion, celery, and carrot Add the spices, and stir for 1 minute until fragrant.
Pour in dry lentils with crushed tomatoes, vegetable stock, and water. Bring to a boil then lower heat and simmer until the lentils are tender.
Add the Medjool dates and simmer until softened. Remove from the heat and squeeze in some lemon juice.
