Whilst bringing water to a boil, trim and rinse the artichokes. Add lemon juice, salt and artichokes to the water, and simmer until the petals pull off easily.
Drain well and place on a kitchen towel upside down. Combine almond flour, mozzarella, parmesan, garlic, parsley, and olive oil in a bowl.
Place the artichokes stem side down in a baking dish, then pack the stuffing mixture in between the petals. Roast until golden and broil until crisp.
Serve warm with marinara sauce.
