Add brussels sprouts, garlic, ginger, and ghee to a baking sheet, and toss together to coat. Roast for 20-25 minutes until crispy and browned.
Roughly chop the kimchi into smaller pieces, stir in vinegar, fish sauce, maple syrup, and sesame oil. Then add the roasted brussels sprouts and toss to coat.
Serve topped with chopped green onions and sesame seeds. Enjoy at room temperature.
