In a food processor, combine flour and starch, then add butter and pulse until crumbly. Add in egg, honey and vinegar until a sticky dough forms.
Then refrigerate for an hour. While the dough chills, blend cashews, lemon juice, yeast and seasoning until creamy.
Roll the dough into a circle about 1/4 inch thick, then spread cashew cheese in the middle. Lay the sliced tomatoes on top and season.
Fold the dough over the edges of the tomatoes, and brush with egg yolk. Bake for 35 minutes, then sprinkle with basil leaves before slicing and serving.
