Bring a large pot of water to a boil and cook your noodles according to package instructions. Drain and run under cold water to stop from cooking.
Sauté shallots until softened. Add garlic, red pepper flakes, tamari sauce, brown sugar, and gochujang, and stir until combined.
Add the cooked noodles to the skillet and toss until they are coated in the sauce and heated through.
Serve warm, garnished with green onions and sesame seeds. Top with bok choy and halved soft boiled eggs, if using.
