Mix all meatball ingredients until just combined. Then shape into 1-2 inch balls. Pan fry the meatballs until just browned on all sides, then set aside.
Add ghee and tapioca starch to the same pot and stir together until bubbly and smooth. Add broth, milk, coconut aminos, mustard, salt and pepper, and let it come to a boil.
Add potatoes, green beans, and meatballs and let everything come to a boil again. Then simmer uncovered for 15 minutes. Garnish with parsley, and serve hot.
