Boil the potatoes, then smash each potato to about 1/4 inch thick. Brush with olive oil, season and roast until crisp and browned.
Next, whisk all the herby dressing ingredients together to combine.
Add shallots to the dressing, then add the cooled crispy potatoes and toss to combine.
