Combine dry ingredients, then in a separate bowl whisk together carrots, applesauce, oil, apple cider vinegar, and vanilla extract.
Combine wet ingredients with dry, until a thick batter forms. Then add in nuts or raisins, if using and bake for 25-30 minutes.
While the cake is cooling, combine cream cheese and butter until creamy, and fluffy. Add in lemon juice and powdered sugar.
Frost the cake and decorate the top with chopped nuts if desired.
