Chinese Eggplant and Pork

This Chinese eggplant and pork mince recipe is quick and easy for a flavorful weeknight meal! It's the perfect paleo and Whole30 Chinese food when you want a healthier alternative to takeout.

INGREDIENTS

Ground Pork

Chinese Eggplant

Garlic

Ginger

Coconut Aminos

Tapioca Starch

Sesame Oil

Seasoning

INSTRUCTIONS

Make the marinade by whisking together all its ingredients until the tapioca starch is fully dissolved. Pour 1/4 cup over the pork. Mix to combine.

Cut the eggplant in half lengthwise, then in half widthwise and then again lengthwise. Cook over medium high heat for 6-8 minutes. Try not to stir too much.

Add oil, garlic, ginger and marinated pork and cook for 4-5 minutes. Add eggplant, sauce and green onions. Stir together for 1 minute.

Sprinkle with sesame seeds and green onion. ENJOY!
