Dressing • Olive Oil • Lemon Juice • Parsley • Apple Cider Vinegar • Garlic • Oregano • Salt • Black Pepper
Combine all the dressing ingredients in a blender and blend until smooth.
Place chicken in a bowl, massage with half of the dressing, and marinate in the fridge for 30 minutes to 2 hours.
Preheat grill to medium high heat and grill the chicken until cooked through, about 5 minutes per side.
Slice the chicken into thin strips and place in a large salad bowl along with the rest of the ingredients. Drizzle with dressing and toss together.
