Before you begin, make the Whole30 BBQ Sauce, or have another BBQ sauce you like on hand.
Cut the pork into 2-3 inch pieces.
Stir together all the dry rub ingredients in a small bowl, and toss with the pork pieces so they are coated all over.
Set the Instant Pot to SAUTÉ and add the oil.
Once the Instant Pot indicates that it's "hot," add the pork pieces in a single layer and brown all sides. You may need to do this in 2-3 batches and each batch will take about 5 minutes.
Add all the pork back to the Instant Pot, then add broth and BBQ sauce. Stir together.
Close the lid, set the pressure valve to SEALING, and set it to MANUAL for 60 minutes.
Once the Instant Pot beeps to a finish, let the pressure release naturally for 15-20 minutes.
Remove the lid and use a slotted spoon to remove the pork to a large bowl.
Set the Instant Pot to SAUTÉ and let the sauce simmer for 15 minutes, or until it's reduced by half.
While the sauce is simmering, use 2 forks to shred the pork.
Turn off the Instant Pot and add the pork into the reduced sauce.
Stir to coat, and serve with more Whole30 BBQ sauce for a stronger flavor.
