Easy Apple Pie Bars with Salted Caramel Sauce (Paleo, Vegan)

Instructions

  • Preheat oven to 350 degrees F and line an 8x8 square baking dish with parchment so the 2 ends hang off the sides. Grease the areas where the parchment paper isn't covering.
  • In a large bowl, combine all ingredients for the crust/crumble EXCEPT chopped walnuts. Mix until it forms a dough when you pinch with your fingers.
  • Scoop out 1/3 cup of the mixture and add to another bowl and mix with chopped pecans. Set aside. This is your crumble layer.
  • Pour the crust mixture into the prepared baking dish and press tightly and evenly into the bottom of the pan. Bake for 10 minutes.
  • Remove from the oven and make the filling while the crust is cooling for a bit. Combine all ingredients for the apple pie filling in a bowl and stir until evenly coated.
  • Pour the apple pie filling over the baked crust, then evenly sprinkle the pecan crumble layer.
  • Bake for 30-35 minutes until the apples are soft and the crumble layer is gold brown.
  • Remove from the oven and cool for 15 minutes while you make the salted caramel sauce. Heat all ingredients for the sauce in small saucepan over medium heat. Stir occasionally for about 5 minutes until combined and thickened.
  • Remove the apple pie bars from the pan by using the 2 parchment flaps hanging off the sides.
  • Cut into 16 squares, and drizzle with salted caramel sauce before enjoying.
  • Store in the refrigerator in an airtight container for up to 5 days.
