Preheat oven to 350 degrees F, and line a baking sheet with parchment paper.
Combine all ingredients in a mixing bowl, and mix well.
Drop the dough onto the prepared baking sheet a tablespoon at a time, spacing them out at least 2 inches apart (use 2 baking sheets, if needed). No need to flatten out the dough, these cookies will spread while baking.
Bake for 10 minutes. If you want crispier cookies, bake for 12 minutes.
Rest for 5 minutes before enjoying.
Once cooled completely, store in an airtight container at room temperature for up to a week.
To make these cookies egg free, use a flax egg. Just combine 1 tablespoon of flaxseed meal with 3 tablespoons of water. Let this gel for 10-15 minutes before adding it to the recipe.
