Ingredients

  • 2 cups thinly sliced cucumber
  • 1 1/2 cup thinly sliced radish about 1 bunch
  • 2 stalks green onions chopped
  • 1 tbsp fresh dill chopped
  • 1/4 cup paleo mayonnaise
  • 2 tbsp balsamic vinegar
  • 1 garlic clove minced
  • 1/2 tsp sea salt or more to taste
  • 1/8 tsp ground black pepper

Instructions

  • In a large mixing bowl, add cucumber, radish, green onions, and dill.
  • In a separate bowl, whisk together mayonnaise, balsamic vinegar, garlic, salt, and pepper.
  • Pour the dressing over veggies and stir to combine.
  • Chill for 1 hour. Taste to add more salt if needed, before serving.
