Creamy Cucumber Radish Salad (Paleo, Whole30, Keto)
Even radish haters love this creamy cucumber radish salad that's so crunchy and refreshing. It paleo, Whole30, and keto, and makes a perfect side for BBQs and warmer weather meals!
Servings: 4 servings
- 2 cups thinly sliced cucumber
- 1 1/2 cup thinly sliced radish about 1 bunch
- 2 stalks green onions chopped
- 1 tbsp fresh dill chopped
- 1/4 cup paleo mayonnaise
- 2 tbsp balsamic vinegar
- 1 garlic clove minced
- 1/2 tsp sea salt or more to taste
- 1/8 tsp ground black pepper
In a large mixing bowl, add cucumber, radish, green onions, and dill.
In a separate bowl, whisk together mayonnaise, balsamic vinegar, garlic, salt, and pepper.
Pour the dressing over veggies and stir to combine.
Chill for 1 hour. Taste to add more salt if needed, before serving.
