Heat a dry skillet and toast the cashews while constantly stirring until lightly browned and fragrant. Then chop them until crumbly.
Cook the ground pork until browned, stir in shallots and turn off the heat. Then add in the rest of the ingredients.
Stir everything together well, adjust seasoning to your taste and serve with lettuce and cucumbers.
Garnish with the rest of the cashew crumble. You can also serve with more mint leaves, cilantro, and green onions on the side.
