Squeeze as much water as you can from the spinach then mix it with softened cream cheese, Parmesan cheese, red pepper flakes, and seasonings.
Pat the salmon dry and season with salt and pepper. Then cut a slit on the side and fill the pockets with spinach stuffing.
Heat ghee and pan fry the salmon skin side up for 4 minutes. Then carefully flip over, sprinkle with lemon juice and cook for 3 minutes.
