Combine pork, green onions, garlic, ginger, and tamari sauce. Sauté cabbage, carrot, and mushrooms. Add pork mixture and cook stirring until mostly browned.
Dip rice paper in cold water, then wait for the paper to soften. Add pork mixture to the center and fold the rice paper around the filling. Each side should have at least 2 layers of rice paper.
Fry dumplings over medium high heat, in a little oil, for 3 minutes per side until golden and crispy. Serve warm with the dipping sauce.
