Separate the mushrooms into bundles, then roll each bundle in a slice of beef.
Next, combine all the ingredients for the sauce together and set aside.
Cook the onions until slightly softened, then place the enoki beef rolls over the onions, pour over the sauce and cook for 3-4 minutes.
Pour whisked eggs over the rolls, then cover again and cook for 1 minute.
Garnish with green onions and sesame seeds and enjoy over a warm bowl of rice.
