Mix all peanut butter cookie ingredients together until fully combined and a dough forms.
Next, bring raspberries to a boil, then add in sugar and lemon juice. Allow to simmer for about 5 minutes, then set aside to cool.
Roll the dough into a ball, then flatten, and add fruit preserve in the center. Close it up and bake until golden brown.
Transfer to a cooling rack until cooled completely, then sprinkle with flaky sea salt.
