If the rice isn't fresh, heat and mix with rice vinegar and sugar. Then press into a prepared pan and refrigerate for at least 3 hours.
Prepare the spicy tuna by combining all ingredients together and set aside in the fridge while you fry the rice.
Next, slice the rice into mini rectangles and pan fry in sizzling hot oil until golden and crispy, then gently flip and repeat.
Top the crispy rice with avocado and the spicy tuna. Then sprinkle with sesame seeds, and add a jalapeño slice.
