Peel and chop up the sweet potatoes, toss with olive oil and salt and roast for 30 minutes, flipping halfway through.
Whisk together dressing ingredients and massage into the kale until the leaves are softer and reduced to half the size.
Add the sweet potatoes along with chicken, apple, feta, pecans, and pomegranate seeds. Then pour over the dressing and toss together.
