Melt butter and cook for 6-8 minutes while stirring often. The butter will begin to foam and turn golden brown.
Cool the browned butter, then add in the sugars, egg yolk, and vanilla extract. Whisk until smooth, then whisk in the pumpkin puree.
In a separate bowl, stir together gluten free flour, pumpkin pie spice, baking soda and sea salt until combined, then add to the wet ingredients.
Roll the dough into balls and place on a prepared baking sheet about 2 inches apart. Bake until the edges are golden and the centers are puffed up.
Mix all frosting ingredients together and frost or drizzle over the cookies. Sprinkle with cinnamon or pumpkin pie spice.
