Chicken Lo Mein

Better-than-takeout paleo chicken lo mein is made using chewy cassava flour noodles, chicken, and veggies coated in the most flavorful sauce!

INGREDIENTS

Cassava Spaghetti

Chicken

Coconut Aminos

Onion

Bell Pepper

Ginger

Garlic

Rice Vinegar

INSTRUCTIONS

Add pasta to boiling water and cook until al dente. Drain and toss with sesame oil. Set aside.

Combine chicken slices with coconut aminos, rice vinegar, and sea salt, and let this sit for 10 minutes.

Chop and prep the onion, carrot and bell pepper whilst the chicken marinates.

Mix coconut aminos, rice vinegar, fish sauce and sesame oil together to make lo mein sauce.

Cook chicken for 2 minutes per side then remove from skillet. Cook onion, carrot, red bell pepper, garlic and ginger.

Add the chicken, pasta and lo mein sauce. Add mung bean sprouts, and toss together until the sprouts are slightly wilted.

Garnish with green onions. Serve and ENJOY!
