Stuffed Artichokes

These roasted stuffed artichokes are a delicious, mild appetizer that’s stuffed with an addicting “cheesy” garlicky crumb mixture! 

INGREDIENTS

Artichokes

Lemon Juice

Almond Flour

Yeast

Olive Oil

Lemon Zest

Garlic

Salt

INSTRUCTIONS

Trim the bottom of the artichoke stems and cut 1 inch off the top. Trim the tips off the petals.

Bring water to a boil, then add lemon juice, salt and artichokes. Lower the heat and simmer for about 30 minutes.

In a bowl, combine almond flour, nutritional yeast, garlic, olive oil, and lemon zest.

Stuff the almond flour mixture between the artichoke petals. Brush with olive oil. Roast for 10-12 minutes, and broil for 1-2 minutes until crisp.

Serve warm and ENJOY!
