Ube Crinkle Cookies

soft & chewy

Soft and delicious gluten-free Ube Crinkle Cookies with a Filipino and American fusion twist. These 9 ingredient classic crinkle cookies are coated in powdered sugar and have a vibrant purple color from ube, a purple yam that’s frequently used in Filipino desserts.

• Butter • Sugar • Egg • Ube Halaya • Ube Extract • Gluten-Free All-Purpose Flour • Baking Powder • Sea Salt • Powdered Sugar

Whip sugar and butter until fluffy. Add in egg, ube halaya, and ube extract, and whip to fully combine.

Stir in flour, baking powder, and sea salt, and mix until a thick dough forms. Flatten a little, then cover and freeze for an hour.

Scoop some dough, roll it into a ball and then coat in powdered sugar. Rest for 5 minutes, then roll in the powdered sugar again. Bake for 12-14 minutes.

Cool for 10 minutes, then carefully transfer to a cooling rack to cool completely.
