- 1 lb ground beef
- 2 tbsp chili powder
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
- 4 slices bacon
- 1/2 onion chopped
- 1 red or green bell pepper chopped
- 4 garlic cloves minced
- 1 tbsp tomato paste
- 2 cups bone broth or beef broth
- 14 oz can of diced tomatoes
- 1 cup diced potatoes or sweet potatoes
- 2 tbsp lime juice
- Sea salt to taste

- Jalapeño slices
- Sour cream or dairy free yogurt, for paleo or Whole30
- Avocado chunks
- Lime slices
- Chopped red onion
- Cotijo crumbles or shredded cheddar if not dairy free
In a bowl, combine ground beef, chili powder, cumin, oregano, and paprika. Set aside.
Heat a Dutch oven over medium heat and cook the bacon until browned and crispy, about 7-8 minutes. Transfer the bacon to a plate then crumble, once cool enough to handle.
Remove all but 1 tablespoon of bacon fat from the pan, and increase the heat to medium high.
Add onion and red bell pepper to the Dutch oven, and cook stirring for 5 minutes until tender.
Stir in garlic and tomato paste for 1 minute, then add in the ground beef and spice mixture. Cook breaking up the beef until it's mostly browned, about 7 minutes.
Add in broth, diced tomatoes, potatoes, and lime juice. Once the mixture starts to boil, lower the heat to medium low to simmer.
Simmer uncovered for 15-20 minutes until the potatoes are tender and the chili has reduced and thickened to your liking.
Salt to taste then serve hot, topped with bacon and optional garnishes.
