Honey Garlic Chicken Noodles

Chewy noodles, chicken, and veggies coated in an addicting honey garlic sauce, ready in just 25 minutes. An easy gluten-free dinner the whole family loves.

Ingredients

  • 8 oz rice noodles or your favorite noodles
  • 1 lb boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces
  • 2 tsp sesame oil
  • 7 oz coleslaw mix
  • 6 garlic cloves minced
  • Green onions and sesame seeds for garnish

Honey Garlic Sauce

Instructions

  • Soak rice noodles in hot water for 10 minutes while you cook the meat. Drain and run under cold water once done soaking. If you are using another type of noodle, cook 1 minute shy of package instructions and set aside.

  • Whisk together all ingredients for the honey garlic sauce in a bowl.
    ½ cup tamari sauce, 3 tbsp rice vinegar, 2 tbsp honey, 2 tbsp chicken broth, 1 tbsp chili oil, ½ inch ginger
  • Add 2 tbsp of the sauce to the chicken and toss together to combine.

  • Heat sesame oil in a large skillet over medium high heat, then add chicken and cook until it’s no longer pink. Add the coleslaw mix and cook for 2-3 minutes until the cabbage is wilted, then add garlic for 1 minute.

  • Add the sauce and noodles, and toss together until the sauce is reduced and coats the noodles evenly.
  • Serve warm, garnished with green onions and sesame seeds.

Notes

  • Make sure to cook the noodles al dente - they finish cooking in the skillet with the sauce, and fully cooked noodles will turn mushy.
  • Tossing the chicken with 2 tbsp of the sauce before cooking seasons it all the way through, so don't skip it.
  • If you prefer your sauce sweeter, use 3-4 tbsp of honey instead of 2.
  • Feel free to swap the coleslaw mix for sliced cabbage and carrots, or whatever veggies you have on hand. Broccoli florets and bell pepper slices are a tested, delicious combo.
  • Leftovers can be stored in an airtight container in the fridge for 3 days. Reheat in the microwave, or heat over medium heat on the stovetop with a splash of water to loosen the noodles.
