No-Bake Coconut Matcha Protein Bars (AIP & Paleo)

Ingredients

unsweetened coconut flakes

coconut oil, melted

matcha powder

+ 2 tsp raw honey

Instructions
Line an 8x4 loaf pan with parchment paper.
Combine all ingredients in a food processor and blend until smooth.
Pour out the mixture into the pan and flatten it with a spatula. Place in the freezer for 15 minutes.
Remove from the freezer and cut into square.
Store in the refrigerator for up to a week.
