Ingredients

  • 2 lb boneless skinless chicken thighs about 8 chicken thighs
  • 1/4 cup avocado oil or olive oil
  • Juice from 1 lemon
  • 2 tbsp smoked paprika
  • 6 garlic cloves minced
  • 2 tsp sea salt
  • 1/2 tsp ground black pepper
  • Optional: chopped parsley for garnish

Instructions

  • Place chicken thighs in a resealable bag or a glass container.
    2 lb boneless skinless chicken thighs
  • Add the rest of the ingredients in a bowl and mix together to make the marinade.
    1/4 cup avocado oil, Juice from 1 lemon, 2 tbsp smoked paprika, 6 garlic cloves, 2 tsp sea salt, 1/2 tsp ground black pepper
  • Pour the marinade over the chicken thighs and massage to coat.
  • Marinate for at least 1 hour in the refrigerator.
  • Preheat grill to medium high
  • Grill the chicken thighs for 4-6 minutes per side, until the internal temperature reaches 165 degrees F.
  • Sprinkle with chopped parsley, if using. Rest for 5 minutes before serving.
