Instant Pot Pork Tenderloin

Creamy and tender garlic dijon Whole30 Instant Pot pork tenderloin that’s perfect for a weeknight meal! It’s also paleo and keto, and comes together quickly and easily.

KEY INGREDIENTS

• Pork Tenderloin • Ghee • Garlic Dijon Mustard Thyme • Bone Broth • Coconut Aminos • Arrowroot Starch • Salt • Pepper

INSTRUCTIONS

Sprinkle the pork with salt and pepper, then set Instant Pot to SAUTÉ mode and sear the pork 2 minutes on each side.

Remove the pork, then sauté garlic and stir in bone broth to deglaze. Turn off the Instant Pot and add in the remaining ingredients, including the pork.

Cook on MANUAL for 0 minutes. Allow pressure to release naturally, then remove the pork and add a mixture of arrowroot and water, to thicken the sauce.

Slice the pork into medallions and add back into the sauce to simmer until cooked through.
