Sprinkle the pork with salt and pepper, then set Instant Pot to SAUTÉ mode and sear the pork 2 minutes on each side.
Remove the pork, then sauté garlic and stir in bone broth to deglaze. Turn off the Instant Pot and add in the remaining ingredients, including the pork.
Cook on MANUAL for 0 minutes. Allow pressure to release naturally, then remove the pork and add a mixture of arrowroot and water, to thicken the sauce.
Slice the pork into medallions and add back into the sauce to simmer until cooked through.
