3-Ingredient Vegan Matcha Green Tea Ice Cream Recipe

This simple and easy 3-ingredient vegan matcha ice cream recipe is so delicious and creamy that you'll never guess that it's dairy-free! All you need is matcha powder, bananas, and a can of unsweetened coconut milk. The perfect recipe for a hot day or a fun after-dinner treat!

Ingredients

  • 3 ripe bananas
  • 1/4 cup coconut milk or your favorite milk of choice
  • 1 tbsp matcha powder
  • Optional: 1 tsp vanilla extract and/or 2-3 tbsp sweetener of choice
  • Optional toppings: chocolate chips, whipped cream, sprinkles, nuts, etc.

Instructions

  • Peel the bananas, slice them into 3-inch chunks, place them on a parchment paper lined plate, and freeze for at least 3 hours.
  • Once frozen, place the bananas in a blender or food processor, and add coconut milk and matcha powder. Blend until smooth and creamy.
  • Taste, and if desired, add vanilla extract and/or sweetener. Blend again.
  • Serve immediately for a soft serve texture, or store in the freezer for 2-3 hours if you want it firmer like ice cream.
  • Sprinkle with your favorite toppings, if using. Enjoy!

Expert Tips

  • If you don’t have a blender, you can pour the ice cream mixture into a food processor and process it that way.
  • I recommend using thicker milk like coconut milk for the best texture. Other plant based milk like almond milk will work in a pinch, but I love the creamy texture of coconut milk or coconut cream.
