Creamy Chimichurri Sauce (Paleo & Vegan)

Ingredients

fresh parsley, packed
1/2
cup
fresh cilantro, packed
1/4
small red onion

tbsp
red wine vinegar

tbsp
lemon juice

tbsp
extra virgin olive oil
plus more, if needed

large avocado, peeled and seeded

garlic cloves, smashed and peeled

sea salt

ground black pepper (omit for AIP)
Instructions
Place all ingredients in a high-powered blender.
Blend until smooth.
Add more olive oil if you want the sauce to be thinner.
Enjoy as dressing, dip, or sauce over everything!
